Do you love tomatoes? Me, I really like it. Whenever my meal has tomato side dish or any viand accompanied with tomatoes, I eat more. Tomato stimulates my appetite. And it’s good, because tomatoes are extremely rich in antioxidants, especially carotenoids such as betacarotene and lycopene, as well as vitamins C and E, making them good protectors of the cardiovascular system and against some forms of cancer. They’re also extremely low in sodium and quite rich in potassium, so they are helpful in conditions such as high blood pressure and fluid retention.
A highly important recent discovery has been the role of lycopene, a carotenoid present in ripe tomatoes. This nutrient is known to protect men against prostate cancer. Interestingly, processed tomatoes contain far more lycopene than fresh ones, so tinned tomatoes, tomato sauce, ketchup and sun-dried tomatoes are extremely important, as they also protect men and women against heart disease.

I love tomatoes! Especially the heirloom type or straight from a garden. Better taste then the store bought kind.
